Batch steam alembic "Carlo Bocchino" method. The distillate is obtained at 70° proof after appropriate discarding of "heads" (the products that appear at the beginning of the "cook") and "tails" (the components that emerge at the end of the "cook") by means of columns with copper mushroom plates.
The Carlo Bocchino Reserve is made up of grappas of different ages and from different Piedmontese vines that combine to form a complex bouquet. After distillation, the grappa is left to refine in Allier, Troncais and Limousin oak barrels. Humidity conditions are of fundamental importance for the evolution of grappa. Year after year, with a slow exchange with the air through the wooden slats, the grappa dilutes the strength and alcohol content and the aroma and bouquet are created. During the years of aging there is a loss due to evaporation in volume of no less than 10-15% and in alcohol of 4-6%. It is the Master Distiller who supervises during the refinement process and decides how long to leave it in the carat/barrel; it is he who establishes the moment of union of the various grappas once they have reached maturation. A year before being bottled, the Carlo Bocchino Riserva is decanted from the carats into a larger oak barrel so that it can harmonize and stabilize.
Very intense and deep color due to the long stay in wood, rich aroma with very long-lasting hints of vanilla, tobacco, opulent, velvety and elegant flavour.
